Dinner:  Sirloin strips, grilled with Garlic and Spring Mix Salad
Snack:  Bacon Wrapped Pickle Slices


Nothing much to say today.  Long weekend and I had some pretty ambitious meal plans but ended up eating out 2 times and had a few beers on both Saturday and Sunday.  I guess it was not as bad as it seemed at the time, I am down 1lb from Friday.  I am good with that.

I made Bacon Wrapped Pickle Slices in the air fryer.  Turned out really good.  2 Slices of Bacon cut into 3 pieces each.  Wrap the pickle slices and put in the air fryer for 10 minutes.  I'll take a photo and post a full recipe next time I make them.

Well it's Friday, busy day at work to wrap up for the weekend.  Notice I left Dinner blank, I have no idea what the plans are for tonight.  We have our Grandson for the weekend so I am just going to go with the flow and see what happens.  

Down .6 lbs today and 6.4 for the week so far.  My expectation is that this will not continue for obvious reasons but it is nice to ride this wave for a few days.

Snack:  1.5 oz Beef Jerky


Well yesterday I had planned to go to the Grocery, had a list and everything.  Got tied up with work and never made it so my menu plan for the day was out.  Fortunately I had some essentials in the fridge and put together Jalapeno Harvarti Burger Salad which turned out to be really good.

I have a lot of work to do today but will have to break away at some point to get to the store.  I titled this post as Eggs Eggs Eggs because I have such a love-hate relationship with this little guys.  They are so versatile, easy to cook and inexpensive I tend to eat a lot of them.  Fortunately for me Costco is about a mile from my house so I buy a lot of these guys from them.  

Day 4 and I had a little bit of a headache yesterday but feeling better today.  This is typically referred to as the "Keto Flu" or "Atkins Flu".  Nothing to worry about, just my body questioning what is happening and asking "Where's the Carbs?".   Drank a ton of water and only 1 soda (Diet Mountain Dew) yesterday along with 2 Cups of Coffee.  I know I need to get rid of this stuff but I can't be perfect.

BTW, I had picked up a bottle of this No Sugar Ketchup a month or so ago and tried it for the first time last night.  It was very good and only 3 Carbs for 15 Grams (1tblsp).

Jalapeno Havarti Burger Salad

6 ounce 90/10 Ground Beef

1 (28 grams) ounce Havarti Cheese

15 grams True Made No Sugar Ketchup

15 grams Mayonnaise

2 Cups Spring Mix

Jalapenos (As many as you wish)






Directions:

This is an easy one.  Weigh your ingredients, if you are new to this pick up a scale of some sort.  I like the Taylor scale in the photo.  I can rest my bowl on top and just keep resetting as each ingredient is added.  Also, most labels have serving sizes in Grams as well as Tablespoons, Teaspoons, etc.  So much easier to just set the scale to grams and start adding stuff and much more accurate.

Brown the burger to your liking, I am a medium kind of beef eater, while the burger is cooking measure out the 1oz (28grams) of Havarti Cheese (substitute is OK).  Melt the Cheese on the burger and add 2 cups of Spring Mix to your Bowl and place it on the scale. 

Change the scale to grams and add the burger when it's done to the top of the salad.  Reset the scale to Zero and while it's on grams begin adding Mayo.  Reset the scale again and add the Ketchup.  Put however many jalapenos you want on top and enjoy.

  • 8g Carbs

  • 57g Protein

Spiced Egg Salad and Greens

2 Eggs (Hard Boiled)

2 (30g) Tablespoons Mayo

2 (15g) Tablespoons of Mozzarella Cheese

2 (12g) Tablespoons of Chopped Green Onion

2 Cups of Salad Greens

Optional:

Pinch Paprika

Pinch Cayenne Pepper



Directions:

Note:  I made the egg salad in the morning while I was making breakfast and drinking my coffee.  It is better if it has time to cool for an hour or more but you can still eat it fresh if you wish.

  1. Add Eggs to small sauce pan and cover with cool water about 1 inch.
  2. Bring water to a boil, once the water is boiling turn off the heat and cover the pan.
  3. Let the eggs rest in the covered pan for 10 minutes.
  4. Remove the eggs and place in an Ice Bath.  Basically just get a bowl and put a few ice cubes in it with water.  This will stop the quickly cool the eggs and stop the cooking process.
  5. Peel the eggs and dice into smaller pieces.
  6. In a medium Bowl ( I just rinsed the one I used for the ice bath) add the Mayo, Mozzarella Cheese, Chopped Green Onion and the Optional Spices (I prefer spicy food but you do you).
  7. Add in the Chopped Eggs and mix it all together.
  8. When it's time to eat just grab some greens of your choice, I used Spring Mix, put that in the bowl and then add the Egg Salad on top and enjoy.  
This was much better than I expected, next time I will probably add some extra Cayenne Pepper but otherwise delicious.

I don't even know how to start other than just being honest with my readers and myself.  This blog was a very important part of my health plan and I think me stepping away from it was a contributing factor in me spinning out of control.  

The last 3 years have been filled with ups and downs and stress eating and drinking got completely out of control.  It's now January 2021 and I have to get control of this ASAP.  Had COVID in July, slept for 2 weeks, almost hospitalized but was told they would like intubate and quarantine me.  Spent the next 2 weeks trying to stay awake and have still not felt 100% since.  Exercise has been non existent and work is non stop.

My job required me to be on site for work for some reason, I'm in IT.  Nothing I was doing there that I could not do at home.  Great people to work with but "old school" mentality regarding people working from home.  I just could not continue to go in on a daily basis and be productive.  Fortunately I found a position that allows me to work from home on a contract position and I am loving this option.  The commute, walking down the stairs to the basement, is my favorite part.

My Wife and I purchased a Bakery in April of 2019.  We are surviving but COVID shut downs have taken our profits and turned them mostly into losses so we are just trying to break even each month.  Fortunately we saw an uptick last quarter and I am feeling good about 2021 returning to some level of normal or at least the "to be determined - New Normal".  I'll talk about the Bakery at a later time.  I'll just say that it turns out, I like dessert...ughh.

Having said all of that, I am still considering myself very blessed.  I survived COVID, I have a job that helps offset the losses at the Bakery and sales are improving as I think everyone is learning to cope with the shutdowns, quarantines and life in general.

Regarding COVID and staying safe, I started being much more disciplined at taking regular vitamins.  This has helped in some regard. The one that surprised me the most was adding Vitamin D3 to my daily routine.  The Doctor explained that during the winter especially we don't get nearly enough sunlight and D3 is critical to our overall health but particularly to fighting off infections and virus's.

Induction Day 6

Rough day yesterday.  Busy day at work and then scrambling to get my tire fixed on my bike so I could ride.  Scale this morning is pretty great, down 9 lbs in 6 days is hard to argue with.

Breakfast:  2 Eggs and 2 Slices of Bacon
Lunch:  chicken breast and Greens
Dinner:  5oz Burger (not feeling well still so stopped at that)

Did not get on the bike until about 6:30 and crashed and burned on the ride.  Ended up bailing about mile 3 of planned 9 and just riding back to my car.  I had forgotten how hard it is the first couple of weeks transitioning to Low-Carb and exercising.  First hot day in a while as well did not help either. Glycogen stores are completely depleted, I felt OK when I got there and excited to ride but I had no power in my legs.  Tried to push through it and ended up getting nauseous and light headed.

I am planning to ride again tonight, lets hope this goes a little smoother than last nights failure.

OK, so the tough part is behind me I believe.  Weight is down 7.2 lbs in 5 days, pretty great start!  Hunger was at a minimum yesterday and I am feeling much better.

I did hang out and have a few beers yesterday and was surprised that I did not gain overnight but I ate very little totaling about 1000 calories so 6 light beers did not do to much damage.  My friend spontaniously started writing goals on an extra piece of drywall in the garage and I snapped a photo of mine.  Will post them here and see if I can manage to cross these all off this year.

Induction Day 2

Day one pretty uneventful, happy to see 3.8 pounds down this morning.  Obviously that is a bit misleading as we went to Hooters the night before I started late and had several beers and a bunch of wings and fries.  So I more or less expected a big difference this morning.  Urine was pretty foul smelling this morning which leads me to believe that the Ketones are being produced by my good ol' liver, thanks buddy.  Some restless leg issues kept me awake a good portion of the night last night, dragging a bit today and have a low grade headache.

Skipped breakfast, still full from over indulgence the night before. Lunch a frozen chicken breast with a slice of cheese and bacon on top.  I decided to do this yesterday in the morning so I had not yet been to the store to buy the food necessary to support it.  Dinner was roasted chicken and a load of green beans.  

Wanted to ride my Mountain bike last night but rain ruined that so Amy and I went to spin class at the YMCA.  Like this instructor and glad Amy was with me to provide a bit of motivation.  Finished with a nice puddle under my bike and my wattage output over the entire class was 147 average.  Need to get that up above 200 but I have to start somewhere.  It was below 100 not that long ago so I see it as progress.  I don't know how true this statement is but I have heard that you should be able to maintain wattage equal to or above your weight for an hour long class.

Here we go again...

Time to get it together again.  It's Thursday morning and my weight has continued to climb.  Can't seem to get a handle on it and continue to make excuses.  I am still exercising regularly but it is more of a challenge carrying an extra 50 lbs.  I believe what did it was seeing a photo of me riding my Mountain Bike a couple of days ago.  Look at that, I barely fit between the seat and the handlebars.  What the hell happened?  How did I let it get this far out of control?  Ughh.

Like most of us I kept telling myself I will start on Monday or there is a holiday coming up so I will wait until after that and then start.  The start date continues to get pushed back while the weight continues to get piled on.  

It was difficult to put that entry to lead into this post.  It's always hard to admit your shortcomings and failures and seeing that 229.8 on the scale and now in print makes it all to real.  They say the first step to recovery is admitting you have a problem, I don't know if that's true but I maybe that's where I am at.

My beautiful and supportive wife is running to the grocery today and I have to figure out what I need.  Sadly, it's been so long that I have taken it seriously I had to read my own writings to remember how to do this.  Anyway, here goes nothing!

The 3 Day Fast - The Day After

Sorry for the long delay on posting my results. I did finish the full 3 days and dropped a total of 11 lbs during that time. However, I am not sure I would suggest this to anyone looking for anything other than a quick miserable intestine/colon cleanse.

Despite taking in a substantial amount of water I was dehydrated for a good 2 days after. My lips were cracked and I generally looked and felt like crap. My brain seemed to be moving in slow motion. Perhaps you adjust after another day or two but I just don't think it would be worth it to me to continue.

My personal experience would lend me to believe that this is not really good for you beyond a day or two. Maybe one day I will try to do 7 days to see if things improve.

The 3 Day Fast - Day Three Evening

OK, so it's 7PM, day is almost over and I am sure I can make it a couple of more hours until I go to bed. I stood up earlier and got pretty dizzy including vision darkening to point of almost blacking out. I realize this is normal with a depleted glycogen store but YIKES!

Went to the store tonight and picked all of the grocery's for the week. My Wife is at Hot Yoga and I will probably cook her dinner when she comes home. As hungry as I am that is going to be a bit of a challenge. I will try not to lick my fingers when I am cutting the roasted chicken I just picked up. It smells incredible.

Tomorrow begins College football with the first game for Louisville at 7:30PM. I am heading down to tailgate around 12 or 1 with my Son and few friends. I picked up some V8 Juices and Unsweetened Almond Milk for breakfast. I plan to eat tomorrow and most certainly drink a beer or three while tailgating. Not really sure how my body will handle it so I will take it slow. Hopefully everything sits well and I can have a good time without stressing about this little experiment of mine.

The 3 Day Fast - Day Three

OK, so today is Day 3, weight 219, so down 9 lbs since Monday morning. Feeling kind of crappy with a mild headache. Mind was moving in slow-mo last night and I struggled a couple of times to find the right words, which was a little frustrating. Overall though I don't feel to bad.

My ride last night was slow but I had no plans of pacing so not that big of a deal. It was 95 degrees out and humidity was maxed out which made it a bit tougher. I opted to ride a new route since I knew there a chance I might want to stop a couple of times along the way. The first 6 miles was basically flat but the second 6 included 3 long climbs including one that was just over a mile long. It was tough in the heat and no tree cover to shade me from the sun. The good thing was that I was of the only ones dumb enough to be out so I think I only passed 4 or 5 people along the route. I am glad I did not go to the other park which would have been busy with traffic and people as it always is no matter the weather.

Last night I had some major hunger pains around 7:30, roughly an hour after returning from my ride. Lasted longer than I would have hoped at 9:30 or so. Ended up getting a bit of my second wind around then and could not sleep. Went to bed hoping to just end the day but ended up being awake until just past midnight.

This morning, I drove my daughter to her carpool and she wanted a hash brown and drink from McDonald's. No issues there, never been high on fast food anyway so not to hard to pass on the breakfast. However, our Office Manager just showed up with donuts, ughh. I don't really have a sweet tooth but I love me some donuts. Finished my work up front and hustled back to my office where I will likely hide for the remainder of the day.

So here we go into day 3, I have a feeling this may be the toughest as I am switching over to ketones for fuel. My body is not used to it yet and tonight's planned run may be my worst yet. Don't plan to push at all, just need to be outside and will likely go on a trail run as I enjoy running through the woods much more than on pavement. Plus the soft turf is much easier on my joints, improves ankle flexibility and strengthens my small fast twitch muscles in my feet.

Last thing, my tire developed "multiple" sidewall holes from a trip to a pretty technical mountain biking trail. Tried to fix it but went flat again almost right away. Ordered a new one on Sunday and should have it in the mail tomorrow! Woo Hoo!!! Also ordered a couple of other upgrades that I am hoping helps with the fit on the bike a bit by reducing my reach to the bars.

The 3 Day Fast - Day Two

Well Day One went without any real issues. I was hungry at lunch and a few times throughout the day but mostly felt more habitual hunger than real pains. Energy was typical and I went for a run after work. I will admit it was not very pretty and I had to fit in a few walks. However, it's difficult to tell how much of that was fitness since my running was derailed last year and I have not really been putting in the mileage. At least not enough to get a true measure of effort.

Stayed up a little later than I hoped and I did get hungry closer to bedtime. Was hoping to go to bed around 9 so I could just end the day as soon as possible. Ended up staying up until 11:30 and woke up about 5ish, which has been more typical lately anyway.

Oddly, I have not had any hunger this morning but as I started to type this I have been feeling pretty hungry and stomach is getting a little demanding. Weight was down 5lbs from yesterday and I realize this is all water as I spent a little more than typical amount of time in the restroom.

Overall, I am feeling pretty good and my resolve to finish 3 days is increasing. I feel like if I make it through today I should be good to go on day 3. Planning a bike ride tonight, going to go to a local park with a goal of 21 miles (3 laps), but will cut it short depending on how I am feeling.

The 3 Day Fast - Day One

So here we go, I was thinking about what I am going to do about this weight gain and since I have run out of excuses to keep gaining what is my next move. Well, this morning I woke up and thought about fasting for 3 days to flush the muck and maybe the negativity out of my system.

So it's day one and I am already filled with excitement and a slight hint of dread. It's odd that as soon as I started typing this post I suddenly felt hungry where I have not been hungry all morning. Food is a powerful drug.

Plan today, focus on water consumption and exercise. I need to find something positive to replace my hunger pains. No idea what that might be but we will see.

Regarding my health, I am up 40 lbs from 2012, I cannot imagine there is any real health risk with the amount of fat I have to lose. My body should start provide ketones so I can start breaking down fat for fuel in the next 48 hours. By day 3 I should feel my energy return be ready by day 4 to be ready and adjusted for the next phase.

Better Today

Last night I was sitting on the couch, watching TV and surfing the web.  My Wife was telling me a story or asking me a question and I responded with an answer of “OK”.  I am not even sure what she said or why I thought saying OK was an appropriate response.  When she pointed out that I could not have listening because my response made no sense I immediately went on the defensive.  She retreated to the bedroom and went to sleep while I remained glued to my computer and in the opposite room.

As I sat there alone I tried to go through what she might have asked or said and why I would have responded with OK.  I racked my brain and could not figure out what had just happened.  I am sure every guy has been in the situation before, I know this was certainly not the first time I had done something like this.

A little background, my Wife and I have been together for 21 years and married 19, we have 2 kids(18 and 14) and stay pretty busy with both work and taking care of the family matters.  While I am a bit older we both married pretty young and had our first child 4 days after our 1 year anniversary.  This left us little time to really grow together as a couple as we were almost immediately submersed in parenthood and all that it entails.

But I digress, so there I was, still sitting in my spot on the couch trying for the life of me to figure out what she said so that I can somehow justify my completely appropriate response.  Then it occurred to me that I am looking at this all wrong.  Instead of questioning why I was not listening in the first place I am spending time trying to validate my response. 

I just dismissed the most important person in my life without regard.  When did I become that guy?  What steps along the way lead me down this path?  I used to be the sensitive guy that could stay up all night listening to her fears and triumphs and share in her joys and sorrows.  I used to be a romantic, hell I once surprised her by picking her up in a limo with her bags packed and we were whisked away to a bed and breakfast for an evening away from the kids.  Now a romantic evening out is dinner at a crappy chain restaurant and then back home where we sit on opposite ends of our sectional couch and play on our tablets/computers while the TV plays back recordings of missed sitcoms.  WTF!

Sure we share a lot of fun together.  We both enjoy going to football and basketball games.  A night out with friends while watching a game is fun as well.  However, have I missed an opportunity to connect deeper with someone that has meant so much to me over the past 20 years because I have been inattentive?  We have often talked about how much we love each other and I don’t question that for even a second.  I know without question that I love her with all my being.  So how is it possible that a person I care about so deeply can be so easily dismissed?  Well if I knew the answer to that it would not be 3AM and I would be sound asleep.  Instead I sitting here alone still trying to not only understand how I got here but how I find my way back to where I was.

Soon our kids will both be gone and we will be alone together more often than not.  What will we do together without the kids as a buffer? What will we talk about?  It’s easy to assume that we will talk about our day at work or what the latest headline is.  Small talk like that is engaging for a period of time but what then?  We used to talk about deeper issues, what drives us, subjects that were real and emotional not water cooler talk.

When I had this epiphany my knee jerk reaction was to immediately go wake her up and apologize.  I have apologized before, it’s not that hard, right?  Then I wanted to write down what I was thinking so that I could make sure I got it right.  As it turns out, not much to make note of.  “Hey honey, sorry I was being a complete asshole by not listening to you, blah blah blah”.  Really?  Not worth the words written much less spoken if I am not really examining why I ignored her in the first place.  So I started writing this post because somehow this is way better.  Maybe because it’s late, speaking to an imagined audience is an easy way to convey my message to her while remaining somewhat detached from the speaker so I can still be objective.  I am beginning to ramble so I will get to the point so I can get some sleep.

I love my Wife with all my heart and soul and because I love her I am going to make a concerted effort to understand how I got here and find my way back.  I don’t think I am naive enough to believe this will be easy as it has taken me 20 years to become an asshole.  My goal is to be better today, hmm, that's got a nice ring.  Of course now comes the hard part.  Where do I start?  How do I put my thoughts tonight into real measurable actions tomorrow so that I can be “better today”.  I know one thing, I won’t ask her, I believe there may be word count limit to a singular blog post.  Haha.  Wait, does that count as insensitive?  Dammit, did I mention that lack self awareness also.

Perhaps a simple list to start. 

  1. 1     Start Listening, seems simple enough right?  Not really, when I say listen I mean truly engage in the conversation.  Put away the distractions and make sure she knows that what she has to say is important to me.

This is harder than I thought, I seem to be stuck on #1 since that’s what this was all about.  Got it…
  1. 2.    Stop trying to lead the conversation.  WTF does that mean?  I know, like most men, when she begins to tell me a story my immediate reaction is to figure out how to dissect it, begin breaking it down and then guide her to a point where I can offer a resolution.  I have no idea how to stop doing this yet because I do this for a living as well, solving problems that is.  So guiding people to a point in a conversation where there is a defined issue, solution with a measurable outcome and steps to monitor progress is part of who I am.

  1. 3.     This is an extension of #2 but I need to stop playing devil’s advocate.  If she is just venting then I don’t think she really cares what the other persons perspective is and certainly does not need me to suggest that her logic could be very well be flawed.

  1. 4.     Don’t be critical.  Just because I break down everything I do into their smallest possible parts looking for the flaws and then consider how it could have been more effective had I done something different does not mean anyone else enjoys this.  Without question I am very critical of myself and I consider this healthy and only serves to improve myself.  If you are reading this post then you are probably catching the irony at about the same point in this post that I just did just now.

  1. 5.     Avoid assumptions.  The reality is that we have been married for a long time and I know that it’s easy to be listening to a story and begin to make assumptions where it’s going based on prior experience.  Because our brains are wired to process data faster than we can verbalize it I believe we space out a bit once we have determined were we believe this conversation is going.  Now instead of listening to the whole story I am already working on my response.  Got to fix that somehow.

Phew, 5 things was harder to come up with than I would have thought.  I think this is a good start and I don’t expect to wake up tomorrow morning after what will now amount to 2.5 hours of sleep.  I am a living breathing creature full of flaws and this list is organic as it should be.  I would expect some improvement and regression over time.  My goal each morning is to be “Better Today” and will be my mantra moving forward.  The realist in me knows that it will not always be attainable but as long as I am making sure she knows I love her and I do care then I figure there is no down side to this effort.

Love you always darling and know that I while I don’t always say it in words or actions my heart still flutters when I think about how much you mean to me.

It’s late and I am not proofreading shit tonight.  I am also aware that this post has nothing to do with physical health but it is completely possible that by improving our emotional well being I may parley that into some physical improvements.  Mind and Body, right?  Time for sleep.
